The blue-green treasure ’Kawatake’

The natural freshwater seaweed ”Kawatake” is gathered in the clear stream ”Kogane river” in Aasakura City, Fukuoka, which is done only there in Japan.
Given to the shogunate as a gift in the Edo Period,
this is a rare and high quality item of Amagi-Asakusa that has been prized as a foodstuff since long ago. It is said it saved the domain from the financial crisis.
A sheet of seaweed Kawatake called ”Jusentai” is written in a recipe book using tofu ”Tofuhaykuchin” of Edo era.
