Chef Atsushi Hirata moved to the foothills of Mt. Mino to pursue his research in the culinary arts. Here, embraced by natural surroundings, he runs the macrobiotic and vegan restaurant Le Restaurant Haze, which blends modern French techniques and Japanese vegetables. Chef Hirata also explores ancient fermentation techniques to increase the umami in his culinary masterpieces. The restaurant itself is a converted 120-year-old traditional Japanese house, giving the dining spaces a sophisticated yet homey air. Guests can enjoy both lunch and dinner here, but due to limited seating and to avoid food waste, reservations are required. Please notify of any dietary requirements when making your reservation.
